Are we already one third of the way through November?  Thanksgiving will be here before we know it, so I want to plan some really good recipes to share, and I am starting today with scalloped potatoes!  These would be delicious with turkey and dressing!  

Being the main cook of the family, I have often felt overwhelmed and unappreciated considering I spend several hours every Saturday preparing for Sunday dinner with my family.  As I grow older, however, I realize the importance of traditions like Sunday dinner, for that is where memories are made.  My mother-in-law carried that tradition with her family for 40 years, and I want to do the same with my family.  She once said she was happiest when her children’s feet were all under the dinner table, and now I understand her sentiment.  As our children grow up and leave the nest, family meals are a treasured time to reconnect, to laugh together, and to play cards-as we often do.  On Saturdays when I am bustling around to prepare everything for Sunday dinner, looking forward to sitting down with my loved ones makes it all worthwhile

Our dear friend has a beautiful garden of turnip greens, so they were the star of the show this week, and this instant pot is such a great timesaver in preparing them.  And in our family, pinto beans are the perfect companion to turnip greens.  So this week, our Sunday dinner was turnip greens, pinto beans, scalloped potatoes, chicken legs, and homemade rolls.  As usual, the instant pot and crockpot were my go-to methods for getting everything on the table.  I hope you find a recipe here that you will want to share with your family! A Glorious October Draws to a Close

October was such a busy month, and it has flown by!  Our son has been moved into his home for a month now.  Our daughter is in her senior year of high school and is busy working part-time and taking college classes.  Here, in our neck of the woods, the fall colors have peaked, and the leaves are glorious!

As Crocktober draws to a close, we have a busy week ahead of us, so I plan to use my crockpot almost daily.  Here’s what we are eating for supper this week:

Monday: Crockpot Chicken Fajita Nachos

Tuesday:  Crockpot Broccoli Chicken Alfredo with pasta

Wednesday: Crockpot Enchilada Stuffed Potatoes with broccoli slaw

Thursday:  Crockpot Poor Man’s Stew and Amish Cornbread

Friday:  (Breakfast for Supper) Crockpot Cracker Barrell Cooked Apples with biscuits, bacon, gravy, and fried potatoes
